Easy curry noodle recipe – Real easy



We’ve all had ramen noodles before. During our early adulthood they were a staple, our sustenance. With a family of 10 we always have several cases of these on hand. They make great, simple lunches and sometimes breakfast for the older kids. Those that are somewhat self sufficient. We usually buy the brands with little or no English on them from one of the Asian markets in Minneapolis. Some are very good and come with up to 4 seasoning packets inside. We currently have a curry flavored brand that we haven’t had before and they are pretty good. In the past I’ve just made my own with the chicken flavored, here is how;

Recipe for 6 packages of curry ramen noodles.
Ingredients:

  1. 6 packages of chicken Ramen noodles
  2. 14 oz can of coconut milk
  3. 3 TBSP of turmeric or curry powder
  • Take a 14 oz can of coconut milk and scoop the thick part off the top.
  • Place that in a pot large enough to make the noodles in.
  • Simmer over a medium heat for a few minutes.
  • Stir in noodle flavor packets
  • Stir in Turmeric.
  • Simmer for a few more minutes.
  • Add 5 cups of hot water. My not very precise formula, take however many packages you’re going to make and boil 1/2 the amount of the water called for minus 1 cup.
  • Bring to a boil.
  • Turn off heat.
  • Add the 6 noodle blocks.
  • Cover and let sit for 3 – 4 minutes. Stir occasionally.
  • Serve just the noodles or in a bowl with some of the curry broth.
  • Top with fresh cilantro or basil if you like.

These go great with sweet and spicy grilled beef or pork strips.
