Peanut Noodles

This is my attempt at a formal recipe for all of you. Please feel free to critique.

Ingredients
1 big package of rice noodles
1-1/2 cups frozen peas or canned peas.
1 medium carrot

Sauce:
1/4 cup of soy sauce
2TBSP fish sauce
3TBSP peanut oil
3TBSP Chunky peanut butter
1/4 cup of water
1tsp minced ginger
2tsp minced garlic
1-1/2 TBSP turmeric
1 TSP cumin
1-1/2 TBSP brown sugar
2-3 dashes of red pepper flakes

Boil the noodles as directed on package. I cook for a little less time so they are firm. You will reheat them later when adding the sauce. They won’t get mushy then.

While noodles are boiling;

  • Grate the carrot. I use a potato peeler.
  • Mix all the sauce ingredients in a bowl.

When the noodles are done:

  • Pour the noodles into a colander, drain and rinse with cold water until they are completely cooled.
  • Pour the sauce mix into the pot used for noodles
  • Add the carrots and peas
  • Heat with a medium flame, stirring frequently, until it starts to boil a little.
  • Plop in your noodles a little at a time. Add, stir. Add, stir. Add, stir. etc…
  • Mix all together and stir until all the noodles are evenly heated.
  • Put into a big fancy bowl
  • Serve and Eat.

You can add meat or any vegetables you like to this. It sounds pretty healthy but it is probably loaded with fat from all the peanut oil.
