Tonight’s recipe is down and dirty…no frills barbecuing.
Barbecue Spare Ribs
- Take your spare ribs add salt and pepper
- Place on a hot grill, 325 degrees or so, meaty side down
- Cook until nicely browned
- Flip the ribs
- Add a light coating of your favorite BBQ sauce
- Cook for about another 10-20 minutes
- Flip the ribs again if you like. I like to play with the food on the grill sometimes. Flip often if you want. Playing with your food on the grill strengthens your bond with the sustanance. May the force be with you.
- 15 minutes before you take them off, cover them with BBQ sauce
- Cook for 15 more minutes.
Done
Roasted Potatoes
- Cut potatoes into large yet bite size chunks
- Here is where I cheated. Place in microwave safe bowl and nuke ‘em for 10-12 minutes. Time may vary depending on your microwave and the quantity of spuds you’re blazing. The idea is to get them near done. Used the grill for crisping and searing in flavor.
- Coat chunks with some peanut oil. Olive oil would be good too.
- Sprinkle with a lot of good chili powder, garlic powder, salt and pepper.
- I then added about 2 TBSP of BBQ sauce.
- Stir, mix or toss. Whatever works for you.
- Place in a grilling skillet. (see photo) These things are awesome. Hint spray the skillet with a non-stick spray first. Potatoes have a tendency to stick due to all the starch.
- Place on grill
- They should be done when the ribs are.
- Eat Up. Serve with any vegetable or salad. I would have loved some asparagus with dinner tonight.
