Pork and Bacon Wrapped Chicken Kabobs

This was the hit of the month. Tasty and fun to eat.
Fist I coated some thick cut smoked bacon with tons of pepper. Our meat processor makes the best bacon. Let it sit for about an hour at room temp. Then you can put it in the fridge.
Then I cut a pork roast and 6 chicken breasts into bite size chunks.
I put each in their own zip baggie and loaded each bag with garlic and pepper. I finished it off with a dash of cayenne pepper and a big healthy shot of this stuff. I’m not even sure where I got it. It tastes like chipoltle with a garlic overdose. Pretty good actually, not too hot.
Let these sit in the fridge for at least an hour. Cut your peppered bacon strips in half and quarter an onion.

Take your skewers, meat and bacon and get ready for the lengthiest part of this. start skewering chunks of meat. Wrap each piece of chicken with your bacon and STAB IT! Alternate pork, chicken, and onion slice.
I heated the grill to 325-350 and tossed them on. I cooked them for about 45 minutes. Turn often the bacon has a tendency to cause flare ups too.


They’re done.
Oh I used some more black walnut in the smoker box in my grill too. The smell from the grill tonight was an odor du heaven.

I made some rice with the Black and Decker Rice Cooker Plus®. I added in about 1/4 cup of the pepper sauce. It gave it a nice yellow color. It could have used something else, I’m not sure.

The kids ate them right off the skewers. The bacon wrapped chicken was my favorite.
